Bacanora is the historic agave spirit of Sonora, Mexico, traditionally distilled from Agave angustifolia Haw., locally known as Pacifica. Produced for centuries in the rugged mountains and desert landscape of Sonora, Bacanora developed its own identity alongside Mexico’s other great regional agave spirits. Its homeland is a place of extreme heat, dramatic terrain, and the spectacular Monsoon, when summer rains suddenly transform the desert.
For much of its history, Bacanora lived underground—production was prohibited in Sonora from 1915 until 1992, forcing generations of producers to preserve their craft outside the law. Today, Bacanora is protected by its own Designation of Origin and is experiencing a long-overdue revival. TOCHO NORTE celebrates that resilient Sonoran tradition while introducing Bacanora to a new generation of agave drinkers.
